Crispy Keto Dosa

After multiple tries, Today I finally made the Perfect Keto Dosa. The Key to perfect keto dosa is patience Ingredients: Paneer - 1 cup (grated) Psyllium husk- 1tbsp Curd - 1 tbsp Salt - 1 Tsp Water - 1/2 cup Method: 1. Mix the ingredients in a blender and make a fine paste. 2. Pour the mix into a frying pan and drizzle oil/butter. 3. Cover with a lid and cook on medium flame for 3-5 minutes/until the dosa is golden brown. 4. Let it cool for few seconds. The dosa gets crispier after  the plate.  5. Enjoy your crispy Keto Dosa with some tomato chutney! About the recipe: Adding psyllium husk makes the batter sticky and thick,So adjust the amount of water and psyllium husk accordingly. However,the batter dilutes in the pan. Don't try to spread the dosa using ladle.insted rotate the pan clockwise and spread it (just like you do for rava dosa).. You can add some almond flour/Coconut flour/ Grated coconut for flavour.

Glutten Free Oatmeal Cookies

These are non paleo cookies.You can use almond flour instead of oats. I used four toppings to make four type of cookies Prep Time 5 mins Cook Time 18 mins Total Time 23 mins Ingredients 2 ripe bananas mashed . 1 cup rolled oats.  2 tbsp honey/maple syrup./brown sugar  1/8 tbsp baking soda.  2 tbsp coconut oil.  1 tsp Vanilla extract. Toppings : Chocolate chips,peanut butter,walnuts&Raisin,Almonds. Instructions Pre heat the oven to 180 degrees celcius. Put all ingredients in a food processor and use the pulse function to make a sticky mass. In a bowl and who likes can now add chocolate drops or nuts. Form balls and press flat at 180 degrees for 18 minutes until golden brown. Allow to cool on the plate for 10 minutes and then place on a wire rack. Keto POHA

A savoury and spicy Indian breakfast. Ingredients 1 cup  Cauliflower (grated) , ¼ cup Groundnuts (crushed), ¼ cup Coriander leaves, ¼ cup Curry leaves, ¼ tsp Salt, 3  Green chillies, 1 tsp Lime juice, 1.5 tbsp Oil, ½ tsp cumin & mustard seeds. Method   Wash the cauliflower and separate stalk and florets.     Shape and cut the stalk into cubes to resemble potatoes and rice the florets in a food processor. Dry roast the peanuts till they get a nice golden brown colour and set aside.   Steam the stalks for 10 minutes or till tender and keep aside.   In a pan heat up 1 tbsp olive oil and add mustard,curry leaves, cumin seeds and green chillies. After few minutes add the ground cauliflower and toss it with few turmeric and salt. Sprinkle some water and cook for few minutes. Keto Butter Naan

Ingredients ¾ cup   Almond flour 2 tbsp ground psyllium husk powder ½ tsp onion powder (optional) ½ tsp baking powder 1 tsp salt 2 cups boiling water coconut/olive oil, for frying (optional) Garlic butter 4 oz. butter 2 garlic cloves, minced Method Mix all the dry ingredients in a bowl. Add warm water and stir throughly. Consistency should be like idly batter. Allow to rise for five minutes. The dough will turn firm fairly quickly,but stay flexible. If it's too firm , add water. If it's too runny then add more psyllium husk. Divide into 6/8 pieces and form balls and flatten using a rolling pin on parchment paper/banana leaf(it will get sticked to the rolling pin otherwise). Fry in a pan on medium heat until the naan turns golden brown.
