Keto POHA


A savoury and spicy Indian breakfast.





Ingredients


1 cup  Cauliflower (grated),
  • ¼ cup Groundnuts (crushed),
    ¼ cup Coriander leaves,
    ¼ cup Curry leaves,
    ¼ tsp Salt,
    3  Green chillies,
    1 tsp Lime juice,
    1.5 tbsp Oil,
    ½ tsp cumin & mustard seeds.
  • Method 

  • Wash the cauliflower and separate stalk and florets.
   
  • Shape and cut the stalk into cubes to resemble potatoes and rice the florets in a food processor.


  • Dry roast the peanuts till they get a nice golden brown colour and set aside. 
  • Steam the stalks for 10 minutes or till tender and keep aside. 
  • In a pan heat up 1 tbsp olive oil and add mustard,curry leaves, cumin seeds and green chillies.
  • After few minutes add the ground cauliflower and toss it with few turmeric and salt.

  • Sprinkle some water and cook for few minutes.
  • Now add the cauliflower stalk and cover and cook for few more minutes.
  • Finally add the roasted peanuts and coriander leaves and transfer to a plate.
  • Sprinkle some lemon juice and serve hot with chutney/ketchup.

ABOUT THE RECIPE

  • This is not an authentic indian breakfast receipe with flattened rice and potatoes. It is one of my favourite receipes. Adding mustard, curry leaves and lime juice brings out the original flavour.

    A single potato would take up your entire carb allotment for the day.When you eat a potato you       spike your blood sugar more than when you eat bread
