Keto Pav Bhajji
Pav Bhaji is a popular Indian street food.
Prep Time: 10 minutes Cook Time: 20 minutes Total Time: 30 minutes
Pav Bhaji has two parts:
Pav – This is dinner rolls made with almond flour.
Ingredients:
Almond flour 1 cup.
Psyillium husk 3 tbsp.
Salt 1tsp.
Baking powder 1tsp.
Water 1/2 cup.
Method:
1. Mix all the ingredients in a bowl with warm water and form a dough.
2. Grease a tray with olive oil/butter and make small balls
3. Sprinkle some Sesame seeds/Flax seeds on top.
4. Bake on 375 F for 10-15 mins.
5. Let it cool for 5 minutes and cut in half and spread butter.
Bhaji – It is made from vegetables cooked in a tomato base. The main vegetables to use for pav bhaji are – cauliflower, carrots, bell pepper (or capsicum),green beans(optional).
Ingredients:
2 tbsp Butter or Oil
2 Onion medium, chopped
5 Tomato medium, chopped
1" inch Ginger
8 cloves Garlic
3 Dried Red Chili Whole Kashmiri (soak 15mins in warm water then grind it with ginger and garlic to a smooth paste. Set this aside, we will add this while cooking the bhaji)
1 Bell pepper Red chopped
3 Carrot cut in pieces
2 cup Cauliflower (Gobi) cut in small pieces
1/2 cup Water
2 tsp Salt or to taste
1 tbsp Lemon juice
2 Onion medium, chopped
5 Tomato medium, chopped
1" inch Ginger
8 cloves Garlic

2 tbsp Pav Bhaji Masala
You can use store brought Pav bhajji masala/ For homemade masala,combine
1 tsp coriander powder + 1 tsp garam masala + 1 tsp dry mango powder (or lemon juice) + 1/2 tsp turmeric powder.
To garnish:
1/2 Onion chopped
1/4 cup Cilantro to garnish
To garnish:

Method:
1. Add onions and sauté for about 3 minutes.
2. Then add bell pepper and sauté for another 2 minutes.
3. Add tomatoes, pav bhaji masala, salt and the ground chili paste. Mix well.
4.Then add in the pre-boiled veggies – carrots, cauliflower and green beans. Mix well
5. Cover and cook for 5-10 minutes.
6. Use a immersion blender/ potato masher to mash the bhaji to the desired consistency.
7. Garnish with cilantro and chopped onions and serve hot.
About the Recipe:
✓ Make the bhaji with generous quantity of butter
✓ Use fresh ingredients, such as ginger, garlic and fresh tomatoes.
✓ Dont forget the butter, lemon juice, lots of chopped onions and cilantro to top the bhaji while serving.
✓ Toast the pav in ample amount of butter and serve immediately.
